The roasting process
This is where we turn high grade green beans into roasted coffee with rich and complex flavours.
We roast single origin beans for both espresso and filter. We roast our espressos medium light and our filters light to preserve the nice acidity and its innate floral or fruity notes within the beans. And as we currently use a 25kg roaster for our espressos, we adjust the roast profiles as we go to ensure we’re getting the best from the beans. We always think we can do a bit better every time.
Many of our filter beans are still roasted in small batches at our home in north London.
