Gramos is looking for a professional and experienced manager to lead our small and friendly team of coffee lovers. This role is ideal for someone looking to take ownership of a speciality coffee bar and is happy initiating and delivering new ideas to drive growth and create positive customer experiences. After nearly five years in King’s Cross, many of our coffee bar operations are set and working well, and we typically receive 5-star reviews for our coffee and service, so this role is about maintaining our high standards, keeping our staff engaged and motivated to deliver excellence, and supporting the directors to take the business to its next level. You will be part of our management team, involved in director meetings and responsible for delivering our growth strategy within the context of our coffee bar operations.

The role ...

Oversee all coffee bar operations – this role is about delivering the vision of the directors and ensuring the coffee bar is run to the standard we have currently built it to. The role will include regular barista shifts and all things that are expected of working within a coffee bar. There is no task that is beneath you, and no challenge too hard to address.

Coffee programme – working alongside our director and roaster, you will provide input into our single-origin coffee programme; making suggestions for origins and profiles, joining cuppings, learning about roasting, setting brewing recipes, overseeing quality control of the coffee we serve and helping to promote our coffee bags to our customers in store.  

Staff management – training staff to high standards, scheduling, delegating tasks such as orders, cleaning and maintenance, ensuring staff are clear on company values, operations and direction.

Health and safety – oversee the food hygiene and health and safety operations of the shop, working alongside staff to ensure high standards rating. 

Equipment maintenance – Keep equipment in good condition, by both pre-empting issues and dealing with problems as they arise. 

Oversight of profit and loss – Stay on top of shop’s KPIs in relation to cost of sales, staff and other expenses, and make adjustments as necessary to ensure healthy P&L.

Drive growth – be part of the management team, and provide fresh ideas for growth and help us to deliver the strategy as it relates to the coffee bar.

About you

You are a punctual, responsible, professional and kind colleague, full of good energy, and with a genuine interest in coffee and love for hospitality. You could be an experienced coffee shop manager looking to make a move to the speciality coffee industry or a senior barista / assistant manager in speciality coffee wanting to have more say in shaping the operations and set up of a speciality coffee bar. You have a strong and kind character, able to lead people to deliver high standards with limited confrontation. You are self-motivated and driven by the need to get things done right, and then to get them done better. You understand the meaning of hospitality and have a very personable nature; great with customers, great with staff. You have plenty of experience working in coffee shops or cafes, including at manager/assistant manager/head barista level, and are looking for a role in which you can flex your muscles, take ownership of a coffee bar operations, and put your great ideas to the test. You are naturally organised, clean and tidy with great attention to detail. You can commit to 40 hours a week, including some weekends each month, and mornings are not an issue for you; you bring positive energy, even at 6am!

We're looking for an enthusiastic, engaged and reliable individual to join our small and friendly team of coffee lovers. Based in King’s Cross Underground Station, this role is ideal for someone who loves speciality coffee, takes pride in delivering quality to customers, and enjoys connecting with people around the world. The ideal candidate should have experience in hospitality and speciality coffee, but the right attitude also counts for a lot.

The Role ...

Making impressive coffee and other drinks - Preparing beautiful espresso-based and brewed coffees, maintaining high standards even in busy times. We typically receive 5-star reviews for our coffee and service, so a high standard is our normal practice.

Being nice with customers - engaging with customers to build a rapport with regulars, educating and informing customers about speciality coffee, advising customers on retail and bean purchases. This requires positive energy, decent amount of coffee knowledge and a keenness to engage with customers.

Preparing food – making light bites for breakfast, baking pastries, maintaining and restocking the baked goods and fridge display.

Quality control – As a team, we regularly taste and assess coffee throughout the day; making adjustments to grind, yield and/or dose as needed.

Health and safety – having good personal hygiene and following essential food & drink H&S standards. 

Coffee shop operations – taking stock of products, ordering supplies and managing deliveries, supporting with wholesale deliveries and e-commerce subscriptions.

General coffee shop maintenance - Keeping the coffee bar clean and organised, and maintaining and cleaning coffee equipment. Attention to detail and a good habit of organisation and tidiness is a must.

Being a team player – Supporting our team with good barista habits and a ‘can-do’ attitude, and bringing positive energy – even at 6am. Come with lots of ideas, all will be appreciated.

Independent working– some shifts include working alone, including opening up and closing the shop ensuring the team is set-up for success, so you should be self-motivated and comfortable with some lone-working time.

About you

You are punctual, reliable, full of good energy, a quick learner and a genuine interest in coffee and fondness of people. You would have at least 2 years’ experience in speciality coffee working as a barista, and looking to work in a company who values quality, professionalism and discovering new coffees from around the world. You are a helpful team member, appreciate tidiness and organisation, and keen to build your skills and knowledge in coffee and hospitality. You can commit up to 40-hours a week, including some weekends each month, and are comfortable opening and closing the coffee shop by yourself. Mornings are not an issue for you, and you bring positive energy, even at 6am!
